Why not? What you can or cannot eat is highly individual anyway. The real question is whether it's good pumpkin pie or not. If it's good I say give it a try. I don't like lousy pumpkin pie. My father makes the best I have had, but sometimes you can get a high quality pie at a local bakery or higher end market. Avoid the generic type pies sold at supermarket bakeries, which can be awful.
I like all pies, but my favorites are key lime pie and pumpkin pie and coconut custard pie. Key lime pie and pecan pie are very popular in Florida where my parents live. In New England where I live, pumpkin pie rules on Thanksgiving.
I love pumpkin pie.

Yes - just made a brandied pumpkin pie and can't wait to dig in. I've never had problems with it or with any other squash (outside of some gas with other squash).
If you tend to react badly to numerous foods, then just try it in moderation. You can have a bigger piece the next day if all goes well. Me, I'd just eat too much of it and hope for the best, but I tend to tolerate food very well.
My father told me he follows Libby's pumpkin pie recipe, and I can attest from eating his pies that following this recipe will lead to an excellent pumpkin pie:
I just had a big piece with cool whip. Sooooo good!! Enjoy!
Sure you can! Everything in moderation. Enjoy!
