I'm wondering what other "-itis" problems people have had that relate to their UC. Since having my colon removed, I've had problems with iritis. Now I'm having reoccurring sore throats. I know the iritis has been attributed to whatever autoimmune thing is wrong with me, but does anyone know about sore throats? I've had two negative strep tests in the past month. The doctor today (not my regular) suggested it's allergies and could be related to the UC. I've searched around on here and the internet at large, but can't seem to find the connection like I did with the iritis. Any guesses?

I don't know about sore the throat thing.
But anything with itis on the end is a bad itis for us. Period.
Good luck on your search. I hope you don't find anything and it goes away. Allergies are kickin in pretty good right now. They are hitting me I know that.
I've got a skin itis.... Don't remember the name of it. I really don't care... But it manifested itself after my pouch was removed. I do remember having it in grade school not knowing what it was and being secluded because the teachers may have thought it was contagious. Back in the early 60's my parents never followed through and thought it was related to seasonal allergies. I know what it was now. I wish they knew more then.

Sore throat is pretty common, even in the general population. Most of the time it is not strep. It could be viral or even a reaction to local airborne irritants, like pollen, dust, pollution, etc..
There is documentation of pulmonary extraintestinal complications associated with IBD, but it is usually in the order of bronchitis, asthma, etc.. In the oral cavity, it is generally aphthous ulcers, increased risk of tonsilitis and laryngitis.
The fact that you already have known extraintestinal complications probably means you are more likely to develop others. In my case, I have IBD associated arthritis, fatty liver disease, history if deep vein thrombosis, and Raynaud's phenomenon. I also have type 2 diabetes, but it also runs in my family, so it may not be related.
What is the take-away? Not much. As long as you've ruled out an acute process, you treat the symptoms and avoid irritants.

So my GI just called with the results of my (routine) sigmoidoscopy from last week. He said the biopsies showed low levels of CMV DNA. I had just emailed him to tell him I was having reoccurring sore throats with nausea and fatigue but no fever and negative strep tests. He's wondering if it is CMV giving me trouble. (I also have ongoing bouts of inflammation in my pouch/cuff and there were ulcerations present in the sigmoidoscopy). He wants to check with some colleagues, so I thought I'd do the same. *wink* Any thoughts on CMV?
I had the sore throat and swallowing issue about 12 years ago, it was diagnosed at thyroiditis. It was treated with medicine and I've never had it again.

Sounds familiar to what I was having a few yrs. ago .. through blood tests they found I had Hypothyroid (not sure if I spelled that right ), anyways a simple test ,then 1 pill a day & all was better

CMV pouchitis is not unheard of, especially if you are immune compromised. Anyway, it can cause a sore throat, even if you are not compromised. It can cause mononucleosis, with long term fatigue.

I came own with Iritis several weeks after a bout with pouchitis. Gone within a day after starting drops thank goodness.

I used to have sore throats, doctors couldn't figure out either until I found the one. Turned out to be throyditis.
Love your terminology of "other-itis"... ha ha
I'm going to use this to explain away any and all future symptoms! So far... so good and I have not had any complications in over a year (except my once a year mouth sores).
