My local CCFA support group has decided to have our own holiday party on December 17, and the format is pot luck, meaning everyone is expected to bring something.

Because we have some members who are on carb and sugar restricted diets, I had the idea of making some cookies using a nut flour, perhaps pistachio flour as suggested by vanessavy, and some sugar substitute. I am looking for ideas and battle tested recipes, meaning recipes that you have made and which have been approved by those who consumed the resulting goods.

One member already told me he is bringing Liberte yogurt, which he is fascinated with and believes to be the best yogurt on the market. So I want to avoid the yogurt family and not compete with what he is doing.

Donna, I agree, and in fact the member of our support group is bringing some of the Liberte coconut. It's the best tasting yogurt I have ever eaten as well, but it is loaded with sugar and calories and I had to kick it off my diet. You are correct, it is like eating a dessert. But it is off the board any way because that other member told me he is bringing Liberte coconut yogurt to the party. It's a general rule of pot luck parties that you never bring something that will compete with something that someone else is bringing, which is why I am thinking of nut flour based cookies. 3 other people in the group besides me are on carb restricted diets and don't do white flour. Interestingly these are people who have UC and Crohn's.

Yogurt is the worst since it is all sugar and carbs. unless you make it yourself. I eat plain goat yogurt if I go into the yogurt area.

I made a good tres leches the other day with almond meal and coconut condensed milk, all sugar/dairy and gluten free Wink I don't have the recipe since it is a bit of a mess and I just moved, crap is everywhere!

I do a lot of deserts with ground up dried fruits (figs, dates, cherries, or apricots) that I roll into a log and then in chopped nuts (walnuts, cashews, pistachios or sesame seeds) and then cut into slices. I flavour them with a few drops of rose water of orange blossom water...they are very, very yummy, sugarfree, gluten free and artificial everything free.
1 cup dried fruit
1 tbls rose or orange blossom water
a few drops of warm water,
a few drops sesame oil or any nut oil (almond, walnut...)
ground cinnamon, ground cloves, cardamon...are all flavour options that you might want to incorporte into the log
Chopped nuts (salted or unsalted according to your taste)
In the bowl of a food processor, throw in all of the drid fruit and chop with the pulse button, add a few drops of the rose or orange blossom water, a few drop of warm water and nut oil until you have a thick and slightly chunky paste. Add any spices that you like now. If it is too thick add more water or oil.
Using a sheet of wax paper, roll it into a log and place in the fridge for 1/2 hr...roll in the chopped nuts an cut into slices.
Serve in little paper cups.

yup, we use it too for the holidays...there are as many different reciepes as there are families...if you are anywhere near a Lebanese grocery store, take a look to see if they sell apricot paste...it comes in thin sheets that are wraped in celophane and folded into a package...the other favorite reciepes are with almond paste, whole dates (pitted or not), pitted prunes, ground almonds, slivered almonds and apricot paste.
1. Fancy fruits:
12 pitted dates
12 pitted prunes
12 dried apricots
1 lb almond paste
natural food coloring
ground nuts (pistachios, almonds, walnuts, chopped nuts...)
sugar or icing sugar opional
Divide the almond paste into 2 or 3 large pieces. Add a drop of food coloring to each pieces and knead a bit to mix the color into them. (ususally we use red, green and yellow but have fun with it)
Make little coloured balls out of the almond paste (about the size of a very large bean).
Cut open the dates, prunes, apricots etc and pit them if they aren't already pitted then stuff them with the almond paste balls. roll them into the chopped nuts or place a 1/2 walnut or pistachio on top. You can sprinkle them with powdered sugar or icing sugar if you like.
With the apricot paste: cut it into about a 4inch wide, 12inch long strip. Roll the almond paste into a 11 inch long rope (about 1/4 inch diameter) and place it on the edge of the apricot paste and roll it into it. The almond paste should be completely covered with the apricot paste. Cut into 1 inch pieces and place them on a cookie sheet to dry. Place a 1/2 almond or pistachio on top and sprink with either icing sugar or dried nuts. Serve!
