I eat a very similar salad every morning with breakfast. I use pickled cucumbers in addition to normal cucumbers, and pickled red cabbage, for probiotics. I chop everything very small, except for the tomatoes. My pouch likes it.
I have noticed a huge energy boost but also more bms.but is definitely better.adding pickles sound good .
Chook it looks great but the dressing you use on it is important too. I usually also add pepperoncini and stuffed grape leaves (Trader Joe's has them) but omit the spinach. Raw spinach is a little too coarse for me. I use Romaine in all my salads- Whole Romaine hearts, chopped.
Good grief - I could never eat a greek salad with my pouch. Too many hard to digest things (kalamata olives being the most difficult, red onions the second). I'm completely jealous!
Everything digests well for me as long as I chew it well. Only exception is spinach but I am not freaked out by seeing undigested food in the toilet bowl. It doesn't hurt me and doesn't hurt the toilet bowl. 40 chews and swallow, cows do it all the time and so can we!
Agree! I lived in Asia for 5 years and my pouch grew quite fond of rice. And, as you suggest, mixed with a few veggies and a myriad or proteins, is incredibly flexible. The sauces -- soy, fish, oyster, etc. -- also are fine and adding ginger / garlic make it quite 'realistic'. Lastly, will sub noodles occasionally and have similar 'positive' results. I just need to keep the chilis to a minimum...
Chook- here is a pic of actual restaurant made Futomaki (last row of sushi in pic) which comes from my favorite New Haven area sushi purveyor, Daiko's:

This is so much more tasty and interesting than some other rice plus protein combinations. Although I like fried rice too!
