I'm having a hard time finding something that works to bulk up my stool on the go. Plain psyllium husk in some applesauce seems to work well before meals, but I can't seem to find anything I can carry in my purse or pocket that would be a good substitute. For whatever reason, the metamucil wafers don't work for me. I've tried coming up with my own recipes but can't really get anything to work that doesn't have an insane amount of sugar. Any suggestions?

There is a few companies on Amazon that make psyllium husk stick single packets, that you can carry in your purse. I just mix mine with some water or juice and down it.

I’m not a Metamucil fan, too many added ingredients.

I use a little screw-top jar and a small bag to put my usual heaping teaspoon of organic psyllium husk powder in.  I just pour water in, put the lid on, shake it really hard maybe 5 times, and drink it down asap so it doesn't get thick.  I love the earthy taste of plain psyllium!  I don't love trying to swallow it once it gets thick, though, because once it gets too thick and takes a long time and is a little gaggy in texture.  I usually pour more water in after I have taken the first dose, shake it, then drink that too.  That washes out the jar a bit (though some will stick) and it gets me more close to the recommended amount of water to take with psyllium.  I put the whole kit in my bag next to my water bottle that I also carry with me.  I have to be careful to pull the jar out when I get home, open it and let it dry or wash it. The wet psyllium in a sealed up jar starts smelling bad pretty quickly. I have never tried the capsules and I'm dubious of them working as well, however, I may try them at some point if I can figure out the conversion rate, teaspoons to #capsules.
