Gas odor fluctuates with what you eat. Without other symptoms, I'd not be concerned, honestly.
That is what I used to call it (rotten eggs) when I had a 'sick stomach'.
I was little and didn't know how to explain it otherwise. The sulphur smell was always a dead giveaway with me...I was sick and flaring.
It usually lasted a couple of days...up to a week and then would clear up on its own.
If after a week it is still that bad you may wish to talk to your doctor and ask for a culture.

I had some wicked smelling gas about a month before my dilation, my pouch wasn't emptying completely and I was getting bacteria overgrowth and some pouchitis. All that has gone away after I was dilated.
I agree with Sharon, I'd ask for at least a culture or even a scope. Your GI might be resistant to this since you just had your take-down saying it is just your body adjusting. I waited many months after my take-down and suffered by thinking it was just my pouch adjusting but it was actually a stricture, pouchitis and possible SIBO.
are you taking any antibiotics?
If it's really SIBO, probiotics and reduced sugar are unlikely to be sufficient, though they are a good idea. A couple of months of doxycycline did the trick for me.
Besides the gas, though, are there any other symptoms? I mean, if things are "pretty good," you just finished abx therapy, and a dilation happened recently, it *could* be nothing. Flatulence stinks! Have you increased your foods recently (knowing you just recently had a surgery).
If there are no other symptoms, honestly again, I'd not be extremely concerned. IF you are having increased urgency, increased BMs, more watery BMs, etc., then there may be something to it. But really, J pouch output is VERY influenced by the foods we eat (because sometimes the foods we eat come out, well... not so "digested" IMO).
Like at work, as a nurse, when there's a "symptom" unless it's attached to other symptoms, it may not be anything to worry about. I have to look at my patient as a whole. Do that with yourself. If there are other GI issues happening with you, seek advice. If not, I'd wait a few days and see if it abates. If not, then I'd mention it to your surgeon and see what their take is.
