A few different possibilities:
1. You are more conscious of your stomach noises when you are laying down in a silent room than during the daytime while you busy in a noisy atmosphere.
2. Digestion occurs 1-6hrs post meal depending on what you ate and how you digest things so you may just be in full digestion when you go to bed.
3. What you are eating does not agree with you.
4. You have some sort of stomach issues going on (lactose intollerance, wheat allergies...) that are upsetting it...
5. Bacterial overgrowth?
And probably a whole lot of other suggestions that others here can kick in...
