If your GI dr has treated you w coprocessor before, would he be willing to give you a new script w just a phone all? I used to call the dr w symptoms and he'd prescribe over the phone...

Getting a prescription over the phone is a good option, if your doctor is willing to do this. I've had my surgeon call in scripts for me before. I'm sure your GI would be willing to do this, especially if your symptoms are similar to what they were before.

If that doesn't pan out, can you call the pharmacy where you got your last prescription filled? I'm not sure how it works in your jurisdiction, but in Ontario, pharmacists are permitted to renew certain prescriptions for you, without the need for you to go back to your doctor. It's worth a call in to find out.

Unfortunately, the pharmacist can't renew that here in the u.s. ... And my GI doctor insists that they can't renew it since they haven't seen me in over a year. They were renewing it for me every once in a while, but they finally stopped, and the cost of a GI visit is nearly impossible for me right now.

Two options
Go to your pcp, usually lots cheaper than a GI doc. Or even call your pcp and have them write you a script.

Or go to a free clinic. You may have to wait awhile. But you will be able to see a doc and then get a prescription.
