I haven't had chocolate in two years and it's been killing me, so I decided to hunt around for a recipe that might be compatible and not cause butt burn. Yee haw! This one works for me (your experience may vary). Honestly, I just decided I'm tired of my butt pushing me around. LOL.
Two notes here. I've read the posts here from people who believe that it's the chocolate that contains cocoa butter which is the culprit in butt burn after eating chocolate. That may or may not be the case since I know we're all different, but I used Ghirardelli Bittersweet Chocolate chips (they're labeled as containing 60% cocoa, if that makes a difference). They do contain cocoa butter, as do the Nestle chips that I tried previously. The Nestle chips made life miserable, so maybe the Ghirardelli chips contain less cocoa butter. The two brands of cocoa I have on hand here don't contain cocoa butter so I'm guessing that because these Ghirardelli chips are 60% cocoa, they must indeed have less cocoa butter in them. I don't know, but I didn't have butt burn after eating these (no more than 2 with a meal or banana worked for me). Also, I seem to tolerate baked goods made with brown sugar or confectioners sugar, rather than white granulated sugar. This recipe calls for brown sugar. Your experience with brown sugar may vary there too. <b>Peanut Butter, Oat, Chocolate Chip Cookies</b> (Makes about 40 cookies) 2/3 cup smooth peanut butter 4 tablespoons unsalted butter 3/4 cup packed brown sugar (light or dark) 1 teaspoon vanilla extract 1/2 teaspoon salt 1/4 teaspoon baking soda 2 large eggs 1 cup old fashioned rolled oats, ground for 30 seconds in a food processsor 1 1/2 cups old fashioned rolled oats 2 cups chocolate chips Preheat oven to 350 degrees. Lightly grease 2 cookie sheets (or use parchment paper). Cream the peanut butter, sugar, butter, vanilla, salt and baking soda in a medium sized bowl. Add the eggs and mix until they're incorporated, then the ground oats, old fashioned oats (unground) and chocolate chips. Drop the dough by tablespoons onto the cookie sheets. Bake the cookies 11 to 13 minutes, until they are barely set and just beginning to brown on the edges. Remove from oven and allow the cookies to cool completely while on the pans. These cookies contain no flour, as you may have noticed. |

Thank you, Mudsoup! Maybe we should ask Bill and Dave to consider a recipe forum. I'll bet there are lots of good recipes out there just waiting to be shared.

Wicked! Looking forward to trying these. Funny, I was thinking the same thing about a receipe forum. I posted about Metamucil wafers, since I had to make my own version because Metamucil isn't shipped to Scandinavia. It would be great to share receipes that help against BB or at least don't give you BB while you can enjoy old sins like chocolate!
