great meals to eat?

I've read a lot about diet and what foods newbies can start introducing into their diets, but I'm deathly afraid of veggies/fruits (even skinned) since I'm only 3 months in.

I stick with chicken & mashed potatoes, lots of carbs, lean cuisines, and other 'soft' foods. Yesterday I had an eggplant parm sandwich and nothing went wrong.

Can anyone give me a couple meals to start trying to get back to a healthy diet? I'm so tired of chicken & potatoes!!

I would love new breakfast/dinner ideas and some healthy (non carb!!!) snacks. This is my snack:
1. lactaid
2. pretzels
3. cheese

Pretty bland diet!!

I love yogurt, so I eat a lot of that, same with cottage cheese.
motts has great single-serving applescauces in flavors with NO added sugar. blueberry, strawberry, peach etc. they are awesome, I eat a lot of that.

I tolerate strawberries, melon and bananas really well I eat some raw apples (no skin) but not pineapple or other berries cause I just can't seem to chew it all up.

good starter veggies: grean beans, peas,
well-cooked carrots, squashes and broccoli
just remember to chew!

instant oatmeal is great! they have a lot of good flavors now and I often add 1/2 a banana (awesome with the banana bread oatmeal)
You can even make it at work since most work-place coffee makers have a spigot for hot water.

oh and fruit smoothies now that the weather is warming up - if you don't add sugar they're a great way to get your fruits in.
